1 tbsp sesame oil
2 tbsp rice vinegar
2 cups frozen peas/carrots
1 lb shrimp Xtra large Shrimp
1 garlic clove
2 eggs beaten
3 cups cauliflower rice
Dash cinnamon
3 tbsp low sodium soy sauce
3 dashes Louisiana 🔥 sauce
2 green onions thinly chopped
1.) Over medium heat, heat oil in a wok or large frying pan (nonstick) .
2) Add onions, then green peppers- stirring often until soft (about 3-4 min).
4.) Add frozen vegetables (peas and carrots) and shrimp - cook until shrimp looks pick and opaque (about 3 min).
5.) Add garlic- stir and cook for about 30 seconds.
6.) Use a rubber spatula or wooden spoon-
move mixture to one side of the pan or wok, on the other side Add the eggs and scramble.
7.) Once scrambled, mix the eggs with the veggies and shrimp,
8.) Stir cauliflower rice (make sure all moisture is gone), soy sauce, hot 🔥 sauce, and a pinch of cinnamon (optional). Cook until well blended (3-4 min).
9.) Remove from heat and stir in green onions.
